Cooking with Kids: Mexican Food at The Taco Truck

Why Mexican? Because even a simple taco can, and should, be fresh, flavorful and healthy.

Authentic Mexican cooking relies heavily on chilies, vegetables and fruits for its distinctive taste and bright, bold flavors and textures. At The Taco Truck in Hoboken, NJ, Mexican cooking authority Roberto Santibañez shows the kids how easy it is to put together amazing tacos. They start by making fresh, healthy corn tortillas from masa harina and water. Nothing more. Next comes guacamole, and learning to balance the heat of the jalapeños with the other ingredients. Finally, they fill their handmade tortillas with healthy favorites such as chicken, black beans and rice, and guacamole, and then they dig in.
