Grilled Chicken with Creamy Avocado Salsita
Ingredients
- ⅓ cup Chobani Non-Fat Plain Greek Yogurt
- 2 medium tomatillos, husked, rinsed, chopped
- ½ medium avocado, chopped
- Juice of ½ lime
- 1 medium jalapeño, roughly chopped
- ¼ bunch cilantro leaves
- ½ tsp kosher salt
- ¼ tsp sugar
- ¼ tsp ground cumin
- 3 Tbsp water
- Cooking spray
- Four 4-oz pieces uncooked boneless skinless chicken breasts
Instructions
- Place all of the ingredients, except chicken (and cooking spray), in a blender and purée until smooth, using a rubber spatula to scrape down the sides and bottom of the blender as needed. Set aside.
- Off heat, coat a grill rack or stove-top grill pan with cooking spray; heat to medium-high heat. Grill chicken until cooked through, flipping once, about 5 to 7 minutes per side.
- Transfer chicken to plates and top with salsita, adding salt to taste.
Serving Size: 1 chicken breast and about 1/4 cup salsita per serving.
