The Southwestern
Ingredients
- olive oil cooking spray
- 2 large eggs, beaten
- 1 Tbsp red onion, finely chopped
- 2 Tbsp jarred roasted red pepper, finely chopped (packed in water)
- 2 slices reduced-fat pepper jack cheese (approx 2 oz)
- 2 Thomas’® Plain Bagel Thins™ bagels
- 1/4 avocado, sliced
- 2 Tbsp red or green salsa
- 1 Tbsp cilantro, finely chopped

Instructions
- Heat olive oil cooking spray in large nonstick skillet over medium heat.
- Add eggs and tilt skillet to distribute evenly; cook for about 30 seconds.
- Sprinkle onion and pepper evenly over eggs; cook until eggs have set up, about 30 to 45 seconds.
- Place cheese over half of egg mixture in an even layer.
- Using a spatula, fold egg mixture in half to cover cheese. Remove from heat.
- Meanwhile, toast two Thomas’® Plain Bagel Thins™ bagels.
- Cut omelet in half and place 1 piece on bottom of each Thomas’® Bagel Thins™ bagel.
- Top each serving with 1/2 of avocado, a tablespoon of salsa and 1/2 tablespoon of cilantro. Top with remaining bagel halves and serve.
- Serving size: 1 egg sandwich
