What’s for Dinner? Cozy Mexican
Thursday: Mexican Beef, Squash and Pumpkin Seeds
Halloween’s great, but my favorite pumpkin association is actually Mexican food — roasted pumpkin seeds, pipian sauce, yum. So tonight I’m making a few Mexican-inspired dishes including spiced beef and vegetables over corn meal (aka polenta) and acorn squash roasted with pumpkin seeds. If this dinner is a hit, I’ll make it again for guests next weekend and serve crudite, dips and salsa to start. What to Make

Tuesday: Jambalaya
This recipe is ready in 20 minutes. That’s right. Not even half an hour and we’ll be having dinner. Granted, it takes a few minutes to chop the vegetables and chicken and thaw the shrimp, but still, I love having a fast, hearty one-pot dinner up my sleeve. I'll add sautéed greens on the side and baked apples for dessert. What to Make
