Peeling and Chopping Garlic Cloves


Step 1
Starting with a fresh head of garlic, break off a clove and set it on your work surface, flat side down. Lay the flat side of your knife (close to the base) on top of the garlic clove. Steady the knife with one hand and use the heel of the other hand to punch down on the side of the knife and crush the garlic clove.

Step2
The peel will come off easily. Discard it and then use your knife to slice, chop or mince the garlic.
